The SS Furst Bismarck ocean liner was built in 1890 and took thousands of German immigrants from Hamburg to their new lives in the United States. The five-deck vessel usually made the trip in five or six days and was a familiar sight offloading its passengers at Ellis Island, New York. Most passengers traveled steerage, of course, but a lucky few were in first or second class and they passed the journey in elaborate accommodations and were treated like royalty. This 1899 menu cover was for a musical evening where an orchestra played Mendelsohn, Strauss and Wagner as guests dined.
