Among the dishes on offer is Poulet Marengo. According to a popular myth, the dish was first made after Napoleon defeated the Austrian army at the Battle of Marengo at Marengo south of Turin in 1800, Italy, when his chef Dunand foraged in the town for ingredients (because the supply wagons were too distant) and created the dish from what he could gather. According to this legend, Napoleon enjoyed the dish so much he had it served to him after every battle, and when Durand was later better-supplied and substituted mushrooms for crayfish and added wine to the recipe, Napoleon refused to accept it, believing that a change would bring him bad luck.

This colorful story, however, is probably myth; Alan Davidson writes that there would have been no access to tomatoes at that time, and the first published recipe for the dish omits them. The more plausible explanation for the origin of the dish is that it was created by a restaurant chef to honor Napoleon's victory.

Café Anglais opened in 1802 and achieved its highest fame when chef to the Rothschilds, Adolphe Dugléré, took over the kitchen in 1866. It closed in 1913 and was referenced by authors such as Marcel Proust, Umberto Eco and in the Alice B. Toklas Cookbook. It is also mentioned in the Oscar winning 1987 Danish film Babette's Feast. This menu is from a Sainte Barbe (Saint Barbara) December 4th Feast Day event. Ste. The owner, Daniel Nichols, was fleeing bankruptcy in France and had arrived in London two years earlier with his wife Célestine and her savings of just £5. Daniel suffered from diabetes and died in 1897. By the turn of the century this restaurant was the most famous in London. Célestine Nicols took over the management of the Café Royal after Daniel's death and ran it until her own death in 1916. This is one of the beautifully illustrated menus from that golden era. Embossed in gold, and with a rather smart poodle offering a basket of flowers as a gift, the menu is written in French which was the style at that time. Over the 143 years that the restaurant was open at 68 Regent Street in London's West End, its fans included Oscar Wilde, who one evening became so drunk on absinthe, he started to hallucinate. He wrote that he saw a waiter watering a field of tulips when in fact the waiter was stacking chairs in the bar. Aleister Crowley, Virginia Woolf, Winston Churchill, Noel Coward, future monarchs Edward VIII and George VI, George Bernard Shaw, Brigitte Bardot, Mick Jagger, Elizabeth Taylor and Richard Burton, Muhammad Ali, Margaret Thatcher and Diana, Princess of Wales all enjoyed the pleasures of the restaurant. In 1996, celebrity chef Gordon Ramsay had his wedding there. The Café Royal closed its doors as a restaurant for the last time in December 2008. Established in New York in 1931 by Adolph Levitt, an immigrant from Russia, he shortened the name to donut and developed the first automatic doughnut making machine. Eventually there was a chain of 18 Mayflower Donuts shops across the country. Levitt printed the famous jingle on Mayflower donuts boxes, showing two men dressed as old-fashioned jesters, facing away from each other, one smiling at a fat doughnut with a small hole and the other frowning at a thin doughnut with a large hole: "As you ramble on thru Life, Brother, Whatever be your Goal, Keep your Eye upon the Doughnut And not upon the Hole." Sally Levitt Steinberg, granddaughter of the founder, recalls: "My grandfather found this motto, the Optimist's Creed, as it is called, inside a cheap picture frame he happened to buy in a dime store. For decades, Mayflower donuts were so popular there were constant lines outside the shops with people waiting eagerly for plump, brown and sugary doughnuts to emerge hot from the machines. Sadly, the chain closed in the 1970s. The Concord Hotel was a famous holiday resort in the 40s,'50s and '60s run by Russian immigrant Arthur Winarick and his family. A two hour drive from New York City, the resort was set amid 2,000 acres of grounds and had 1250 guest rooms and a 3,000-seat restaurant that was entirely kosher. There were 40 tennis courts – more than Wimbledon, the hotel boasted – and three golf courses including one called The Monster. Some 1,100 lounge chairs were set around the outdoor swimming pool. The Concord had a reputation for top entertainment. Famous comedians and crooners of the era played there and guests danced to the music of big bands in the cavernous nightclub called Rio Cabana that had dance instructors on hand to show them the steps. As air travel became more affordable, resorts like the Concord fell out of favor and the hotel was sold in a bankruptcy foreclosure in 1999. It was all thanks to American engineer and industrialist George Pullman who, after spending an uncomfortable night sleeping upright during a train journey, was convinced passengers would pay for better amenities. He established his company in Chicago in 1867. Passengers could rest in sleeping cars and eat in dining cars decorated with chandeliers and leather banquettes as trains sped from city to city. It must have been a delightful way to travel. Freshly prepared gourmet meals were served by uniformed waiters and champagne, liquor and beer were served - though Prohibition laws in many states restricted when these beverages could be served. It soon became popular with Tammany Hall politicians and sporting figures, especially prize-fighters, and the business flourished. The restaurant expanded by taking over adjoining four story buildings and was soon hosting opera stars from the nearby Grand Opera House on Eighth Avenue. One attempt at innovation backfired spectacularly when a phonograph was introduced to provide entertainment to the patrons. In its opening years it was the stomping ground of stars such as Noel Coward and members of the Rat Pack. The hotel's most famous guest – the billionaire businessman Howard Hughes – came to stay in 1966, renting the top two floors, and liked it so much that he bought the property a few months later. It was one of his many investments in Las Vegas. As the years went on, the Crystal Room played host to new talents such as Barry Manilow, Neil Sedaka, Cher, Tina Turner and Wayne Newton. They all loved the crystal clear acoustics, the gaudy décor which, naturally, featured huge crystal chandeliers and the atmosphere. The Desert Inn underwent a $250 million refurbishment in 1997 and in 2500, shortly after celebrating its 50th birthday, the property was bought by the tycoon Steve Wynn.
